I thought everyone ate tomato sandwiches? My favorite sandwich is toasted white bread, mayo on one slice, mustard on the other, juicy tomato slices, bacon strips and top it off with a fried egg. Tomatoes must be heavy peppered and it is better if you get your egg from your hens in the backyard coop.
It is the simple things that make life fun to live. |

I returned from vacation to find a garden full of tomatoes and other veggies. I am having my first tomato sandwich of the season right now. Stoneground wheat bread, toasted, Duke's mayo, Stump of the World and a generous amount of salt and pepper! Delicious!! Nice to be home!!

Yes, to the white bread (preferably Bunny Bread) non-toasted.
Yes, to the mayo laid on both slices of bread generously (should be Dukes) Yes, to the largest, freshest, homegrown mater you can find (sliced thick) and sprinkle with as much black pepper as you can tolerate. Anything more than that is just gettin' fancy. Please forget about any kind of diet, or healthy eating habits while doing this. Eat as many as you can for the precious few months that fresh tomatoes are available. You only live once. Oh, yeah. And have yourself a regular coke poured over a big glass of ice while enjoying your sandwich. |

I love whole wheat bread for a tuna sandwich, but NOT for a tomato sandwich.
Toasted white (maybe something rustic but tender), butter or mayo then some cheddar while still hot, then slabs of tomato on top of that, then lots of salt, pepper, and EVOO, then the other piece of bread on top (or just open faced). Bacon definitely great addition. But I do want the tomato to be the star. Not much beats this... |

They all sound good, but I'm still sticking with my favorite recipe --
One fork split English Muffin (homemade if I'm feeling ambitious) Reserved Bacon Fat (stores well in a mason jar in the fridge) One 1/2" thick slice of a ripe tomato Mayo (Hellman's, but someday I'll have to hunt down some Duke's to try) Heat a pan or griddle over medium heat. Spread the cut side of both English Muffin halves with bacon fat and grill face down in the pan. Allow to cool slightly then spread both halves with mayo. Add tomato slice, postpone yearly physical and blood tests until mid-November, and enjoy. |

To everyone worried about saturated fat and cholesterol, there's good news.
http://well.blogs.nytimes.com/2015/0...rictions/?_r=0 I can't believe this hasn't been covered in the media better! We are now told by the ADA that we can eat saturated fat, cholesterol, and salt to our heart's content. What we should avoid? SUGAR. Of course a lot of people have been saying this for years. Time magazine had "Eat Butter" on it's cover last year. But nobody reads Time anymore I guess, because people are still thinking saturated fat and cholesterol are evil. They never have been, we were confused the last 60 years. Thus the increase in heart disease and diabetes during this time. For the record, regular mayo doesn't have much saturated fat in it - just a bit of cholesterol from the egg. Unless of course you are in my house, and eating bacon fat mayo.
