PICKLED OKRA

3 1/2 Pounds okra, stems removed without damaging pods
3 Cups Water
3 Cups White vinegar
1/3 Cup Pickling (canning) salt
3 tsp Dill seed
4 Cloves garlic
2 Small red peppers, stemmed and halved lengthwise

Combine water, vinegar, salt, and dill in large stainless pot
Stirring to dissolve salt, bring to boiling over medium high heat.
Meanwhile:
Pack okra into 4 pint sized jars
Add 1 clove garlic and 1/2 pepper to each jar, leaving 1/2" (2cm) head space
Add hot liquid to jar, maintaining the 1/2" head space
Remove trapped air bubbles (adding more liquid if needed)
Wipe rim and install lids
Cover completely with boiling water in a water bath canner
Process for 15 minutes

Be patient: most pickles taste best after a few weeks steeping!

Default Taking some heat out of pickled jalapenos???

I've got lots of jalapenos and want to pickle some whole.
How can I do this and take some heat out of the peppers?
I read somewhere that olive oil is the secret when pickling peppers but it did not say the secret to what!

You can slit down one side of the pepper, use a spoon or something, and scrap out the seeds and white membrane. The heat is in the membrane that holds the seeds to the interior walls of the pepper.

If you want to can them whole, you can can them with blanched carrot chunks, other veggie chunks like cauliflower or whole sweet peppers, and the carrots, veggies, and sweet peppers will draw off some of the heat. This makes a nice giardiniara: http://allrecipes.com/Recipe/hot-ita...ra/detail.aspx

I like them canned in a bread and butter pickle mix, takes just a little heat out. Just cut the sugar to less than half. As mentioned in the above post, mix with sweet peppers. We fix them both ways.

Default pickled peppers

Well, we used up all the extra Jalapeno & Banana peppers we had...we pickled them!
Did some bread and butter style with a mix of both types of peppers and some sliced cukes.
Did another batch dill style with just the peppers.
Check'em out!

Oh now I see they are upside down peppers.

You take the jar off and let the pepper stay in the lid.

Nice job I'm glad to see the bread and butter style hot peppers are catching on.
