Nobody said this yet (unless I missed it) .... use Tomatillos, not tomatoes. Cumin, which has been mentioned is also forgotten by most.

Blanch 4 or 5 or your ripened vine tomatoes (I know you have some) in boiling water for 30 seconds. Pull out and let cool, pull off skins and squeeze out water and seeds. Throw in blender with half an onion, 4 or 5 chili tepin's, one large clove of garlic and blend till smooth but not too smooth. Toss in pan and cook down for a few minutes to reduce. Throw in some chopped cilantro and season with salt to your taste...squeeze of lime.

The secret ingredient is the chili tepin...best flavored hot pepper in the world.

NO vinegar or bell peppers in my salsa!!!
Here's my recipe, which I don't even give to some of my own family members.

I like mine salty and garlic. This recipe is all up to your taste....change it into your own.
I always make it fresh. No roasting or heating.

About:
Two cups tomatoes,chopped or crushed
One or two jalapeños or Serrano or both
Handful of cilantro,chopped
One onion,chopped
Oregano,crushed,half TBS
Cumin powder, about three or four shakes
Three big far cloves of garlic,crushed with one TBS of salt
Mix all and add more salt.
Add one lemon,or lime
I use a stick blender too
Stir all and let set in fridge for a while.

Chips and hot sauce is a goood supper for me....
This makes a good Pico de Giao,too. Just don't use a blender.

It hasn't worked for me I am practically hairless from stem the stern.
Maybe it all got burned off.

It is good. We tried it last night.
