Default Back at it again

I have a man crush on Mark Wiens at the moment. He's eating some awesome food in Sri Lanka and I had to try it. The inspiration came from here.

I started with homemade dough for ramen, I even used baked baking soda to get that texture.


Here's most of the players but I did add a fresh tomato, fish sauce and homemade shrimp stock I had in the freezer. In the bowl is a pack of seafood mix from the store and the plate had onions, green onions, ginger and garlic.

Rolled out some ramen and fettuccine noodles.

Cracked the crab shells to soak in that awesome curry sauce.

Sauteed the veggies, added the spices, shrimp broth, can of coconut cream and a bag of seafood mix to make a good seafood broth, cooked it for a while to reduce and concentrate the flavors then added the king crab to let them soak that flavor in. The crab legs went in at the last 15 minutes so I didn't turn them into mush.

Made a bowl and started drooling. Topped it with cilantro and green onions, that's Sambal ground chili in the middle for a little kick, it's not hot but has a good flavor.

Side plate with stuffed crab and more king crab to slurp that awesome gravy off of.

Crab and curry is a match made in flavor town.

It's the closest thing you can get to ecstasy.

The stuffed crab with that gravy/broth was amazing.

That's shrimp and clams from the seafood mix on top, It's like a paella in a spoon with curry sauce.

It was a process to get to this point but so worth it, THIS has to be done again but next time I wanna use the biggest shrimp I can find.

I'm ashamed I couldn't eat that lonely crab, I'm blaming it on those two foot long noodles.

He was lucky to be born with skinny genes, I'd weigh 400 lbs if I ate as much as he does.

I used a diced tomato and could've used a little tomato paste like most recipes call for. I had to start somewhere on the first time and it was surprisingly good.

The base spices were Tom Yum paste, Geram Marsala, curry powder, chili powder and paprika which also gave it a reddish color.

Drove by Alesi Pizza today and bought some dough. It was early with only a few cars in the lot and met both of those guys in the vid. I remember coming here since I was young, probably 8 or 9.

Then went to the store and robbed the salad bar and bought some cheese. How can you get pizza toppings cheaper? Shredded ham, pepperoni, bacon, black olives and red bells, all for $6. It's almost like stealing, was that wrong? A few other ingredients and I'm ready for pizza.



And then it begins.

Perfect cracker crust and still a little chewy.

Pizza looks good have you ever made pizza dough with semolina?
If not you must.
50/50 bread flour and semolina is pretty good.
Or straight semolina.

No I haven't tried it but do have some. What did you find that makes it a must try?

Gives the bread or crust a sort of nutty butter taste at least to some it does.
Better texture too.

I can't believe we all missed National Hamburger Day yesterday so I had to pay homage to the simple concoction that changed our lives.

80/20 CAB smash burgers on the "Made in USA" Sunbeam gasser with Grill Grates. Love that double stack burnt charred beef burger!!!! Can we give a moment of silence to Honor all those Old School Diner style burgers everywhere?

Wok-n-it Wednesday!!



On the menu is Lo/Chow mein, I still don't know the difference. General Tso's chicken and Sesame chicken.

Fresh noodles boiled and cooled, veggies chopped, boneless thighs marinated.


First fry on the chicken

The jar has American stir fry sauce that's been marinating since yesterday and prepared the General Tso and sesame sauce.

It's time to stirfry

Time to eat! Topped it with fried garlic and Sambal hot sauce.
