Worth explained it well. It is extremely sweet and through our experiences over the years - don't attempt making it on a rainy or humid day. By saying it's extremely sweet - that might be an understatement.

Default Friendship Cake Herman

There are a couple of threads with info on a Friendship cake, but the recipe didn't match up with what I remembered. There was a recipe that I knew I had read or heard about in the past called a friendship cake. It was kind of odd to me. By shear luck, I found a site that let me know that its real name is a Herman cake.

I knew I had heard of or read about it but as I thought about it over the past few days - I had my doubts, but tonight, I finally found that it is a real thing. I remember my aunt brought the basic part that is shared from the mountains in Arkansas. I would have been in my early teens then - that's why I didn't remember the details.

Out of curiosity, have any of you done this?

Yes . . . we liked it but the starter is a bit like zucchini in season. Before long, your friends start to hide when you show up with containers!


Actually, you just have to scale it back and be a bit ruthless in keeping your culture from expanding out of hand. Try it, I bet you will enjoy it, and the starter can be used in a bunch of recipes including waffles!

Yes, my mother was given some Herman starter many years ago and made it once or twice. My understanding was that the living culture was the part that got named Herman, since it was alive.

Oh I remember this from years ago. We didn't want to let poor Herman die and had to keep making (and eating) the darned cakes {LOL}.

Ten days to make Herman. Just like a lot of male things, Herman seems to be done prematurely

The holiday dessert I referred to is also known as a "30 Day" cake. I would think that poor Herman was very limited on the taste subject. And the "30 Day" cake does not make "Beer". It makes a very tasty wine. I have clarified it and bottled it in years past.

I don't think I would ever make Herman. Somebody might try to slip some hops in there and mess up dessert.

Still working on the dried fruit portion of the deal.
The pineapple came out nice.
Everything else is good too.
Wont be any fake fruit sweet stuff in these cakes.

How long are you soaking the drunk fruits?

I'm still going too, this smells like it will give you buzz already. Something like MadDog or along those lines.

Hmm, I wish I could say I was drinking, but did several threads become one?

Anyway, I was going to add that grinding allspice and nutmeg is way more aromatic. In my opinion - much better than pre ground spice varieties.

Worth, if I had the money, I would make a fruitcake too.

Salt, the 30-day cake looks like it would be cheaper to make. They say the recipe makes 3 cakes' worth. If you bought the small cans of fruit, (ideally 1/3 the size of the big ones, but in reality probably half-size), less of the other ingredients, I think it would be much cheaper than having to buy candied fruit.

I've made fruitcakes much better than https://www.collinstreet.com/about_us The fact is that after a year of supporting our adult child, his wife, and grandchildren - we no longer have any money. Default on credit cards - cashing in change just to go to a funeral... but darn, it was fun making fruitcakes back in the day.

I guess they will soak for a week, it isn't like I can come home from work and make the things.
Still haven't decided on the batter yet.
If this works out right I will have enough to last for eternity.
