Gonna forgo the bacon on anything but I have three racks of baby back ribs smoking.
On the bank waiting is shrimp the ground meat peppers onions and so on.

Habanero taco poppers.
Cheese mixed with Monterey Jack.
Stuffed inside a ground chuck ball seasoned with chili powder black pepper salt red pepper bread crumbs and an egg.

Shrimp just got slathered in chili powder, hot red powdered cayenne pepper salt and melted butter.
Then put on skewers.

Look at the crowd at Coopers BBQ in Llano Texas.
I have been going to this place all my life and my how the crowds have swelled into unbelievable proportions.

I used to be able to just walk right up and order.

Dang, you have a feast going over there!!!!


The BBQ scene is getting bigger every year so I'm not surprised. By the way, Arron Franklin has a new Steak book coming out and he sent out a teaser about his smoker building business. They're designed for home cooks but it's suppose to hold 3 briskets. No info on the price but I'm guessing it's gonna be over 1K.

I just ate a flaming hot skewer of shrimp.
Hot from red pepper.
Here it is.
The baby backs dont have anything on them but salt black pepper and olive oil.
They smoked dry for a good long time.
Shrimp and meatballs swimming in seasoned butter.

Worth... just another newbie question... can i use green applewood for smoking or does it need to be dried/seasoned and then soaked for smoking?

Nope you can use it green for smoking, I have used peach wood too.
Today it is lump oak charcoal and hickory chunks.

Made a dipping sauce out of V8 tomato juice Steens syrup Limon juice and chili powder.
Not shown.

I used the charcoal and hickory chips for my lamb. along with garam masala salt, pepper and raw sugar.. it was divine! that looks yummy.

anyway, we were pruning apple trees and I thought... hey! I wonder about this... I was going to smoke the Easter meat with it. thanks!

Most of your fruit wood has a delicate flavor as where mesquite can be bitter and over powering if used improperly.

The meat in the pictuer isn't raw.

I don't think I saved nearly enough wood. oops. I will just have to go sneak a few branches off the trees where I don't think he pruned hard enough.. I just started Sundays meat on the pseudo smoker...
