We used to put red hot boulders in tbe pond so they would explode and pop.
the water would start to boil.

We just makes it like we likes it.

Fat back, salt pork, scrunchions, cast iron pan fried slow. Bacon will work in a pinch. But cut off most of the lean meat and save for Sunday eggs.
drain and set aside for garnish. Pour off most of the pork fat leaving a bit for the miropoix.

-White wine does something odd to clams and oysters. Brings out a metallic taste. Just too hard to find the right one so i avoid it for any brothy cream chowders. Tomato chowders can handle the wine fine.

No carrot, No OldBay, No flour. We like brothy chowders using a flavorful stock, Not chicken broth or bouillon
And it is not called ClamGravy. So many are as thick as wallpaper paste.

Start another batch of scrunchions because we ate the first batch....
Garnish with scrunchions and parsley, sea salt at the table. I make my own but Maldon is a good one.
Oyster cracker at the table, Westminster. Homemade crouton will work in a pinch.

bouillabaisse i hope you have a recipe you dont mind sharring.ive never had it myself but my father was treated to some in maryland and said it was the best thing he ever put in his mouth.

Seriously, in MD they'd likely use crab instead of lobster, and local fish and shellfish. Look for a recipe, but realize that you'd best use local fresh seafood. Err... What local crustaceans you gots in Killeen?

Gulf coast fresh if you know where to look on the gulf coast.

About 250 miles.
I used to drive from Bastrop and pick up about 100 pounds of Royal Red Shrimp right off tbe coast from the boats.
Royal reds are deep water out in tbe middle of the gulf.
Huge.
Im about 150 miles Coppers Cove is about 100 miles from me north west.

i can get to galveston in about 3 and half hours.i go fish down there sometimes.what type of fish heads are best

I have no idea about fish heads but I consider Galveston a chemical sewer.
Sorry.
Matagorda bay and south is where you want to go.
Best oysters on earth.
Taste like fresh rain smells.
