I have used both for ten years so he found it fit to ship them to me as a gift for showing him how to sharpen a knife.
I know some folks like the gadgets but I like my stones.

Nice stones, Worth..
I have several nice bench stones, and used to use them daily for various knife and tool sharpening. The Norton India stones are a must have, as is a good hard Arkansas if you use stones. For many years now I have used wet or dry sandpaper of various grits backed by a flat steel plate, or a thick piece of plate glass. This way I never have to flatten a worn stone before I start sharpening. Case(the knife co.) made a ceramic stone they called a Moon Stone, it's the only stone I use now, and I use it for honing chisels and plane irons after 400 grit or so paper..

Hellmanns I use a lot of wet dry black sand paper to sharpen too.
The one gray Norton stone on the left I got just to clean and dress my drill press and table saw tops.

The little red knife is a Case Knife.
The carbon steel knives are an old set of Forge craft I picked up in Odessa Texas in 1981 at a place called Strike It Rich based on the oilfield boom closed now.
Maybe not the best but they are easy to sharpen and stay that way.

First off I know I need to fix the wall paper.
But I will see if this works.
As you can see too many processors and blenders.
Also stashed away are 4 maybe five crock pots.
The darn place looks like a department store.
I have got to get the bar cleared off it is driving me crazy.
The shelves are where Smokey use to have her food and water when Boo Boo was alive.

Found two more divider trays in the garage.
Most of the stuff was just tangled up.
Now it has a home.
All of the drawers are now organized the rest of the stuff will go where it belongs or the trash.
This is making me feel a lot better.

My first Carbon, very good to my taste buds. "The best out of all of them" say others. There's been 30+ varieties sampled this season so I guess that's saying a lot.

Counterclockwise. Had to pay tribute to the almost 4 y.o tomato-eating monster, it struck soon after the volatiles lured it.

That he did.

While I'm here. As promised:

Gallina Pinta (abbreviated)
  • -Hominy canned
  • -Beans (peruanos, mix, up to you)
  • -whole onion
  • -whole garlic cloves
  • -Tail
  • -Chamorro/Chambrete (leg-hoofs) or ribs with meat attached (with these it can get quite greasy and it may require removing most of the liquid gold to keep it AARP friendly)
  • -Green Pepper (spice level up to you, but light green ones work best, sliced in long finger lengths to insure they survive to the end)
  • -Spice profile is typical northern MX, you know the players already (oregano, cumin, onion powder, et al)

Tail 1st, then 2nd type of flesh, then the beans with onion + garlic (whole so you can pull em out later, liquefy, and return to mix), then hominy (already cooked if canned), finally peppers. You know how long.

Allow to co-mingle overnight in fridge (after it cools of course).

Reheat over flame and serve it up with typical menudo service (diced onion-chives, oregano, powdered chiltepin, cilantro, finely diced lengths of green cabbage and radish can come in and play too). Fresh bolillos/birote go well with it, as do good corn tortillas. Enjoy!

PS Happy Bday!

Folks I am as busy as a bee right now making a mess on the table redoing my knife handles.
But here is what I had late last night for a birthday supper.
The piece of meat was a great find.
Look how dark it is.
It is a strip steak and it melted in my mouth it was so tender.
They had a pack of them marked as select it was better than their so called prime.
If you ever see a piece of meat at the store like this buy it you won't be sorry.
The cake is ridiculous.
I bought a can of frosting and doctored up a small piece of cake I bought.
The ice cream is Blue Bell Dutch chocolate.

Worth, what are you doing with your handles?

I don't have a problem with any of my (duly blunt) knife handles but I could sure use a tutorial about putting handles back on tools. Including my (ever sharp) axes. I have a couple that have got loose, now I can't use them. But worse, I have garden tools with no handle at all.. and especially my very favourite pick mattock. Which has been sitting for a good while, waiting for me to figure it out. Yes, not just a klutz, but also an ignoramus!

This, no power tools needed.
I was going to start another thread and hopefully Hellmanns will get involved.
