If you are able to find salsas (Hot Sauce) made in Mexico you will find they are somewhat different than the stuff made in the USA. I make my own this way and I find them much more flavorful and so do the people that try them. Last night I made hot chocolate and put in chili powder cinnamon and cayenne pepper. I make my own salsa, too. There's nothing like fresh made.
I live in Pennsylvania Dutch country. Their idea of spicy and mine can be quite different. If you like fermented or pickled anything, you're in the right place up here. Their idea of a good pepper selection is 'green, orange, or red", and I couldn't find a habenero here if my life depended on it.

There are two Mexican grocery stores in our local town. You never know what you are going to find in them. A month ago there was a huge pot that was as big as a 4 burner stove/oven. Years ago, about half the items were labeled in both English and Spanish - nowadays, just Spanish. It's fun shopping there. Especially shopping in the one that has a café built in. Smells so good in there.

Salt maybe the reason why they stopped putting things in English is a sort of get back at folks.
With all of the hoopla over what language is to be spoken they said to devil with it. How would you like to go someplace where you cant speak the language and have someone come up to you and yell at you. At work one of the guys that works behind the food line speaks English but doesn't have a grasp on everything. Like the word without. I asked for two burger patties without cheese and he will give them to you with cheese. Everyone else would get the same thing and be frustrated. So I gave up and started asking dos hamburger patties sin queso. Of course now the English speaking guy with him behind the line got confused. Worth, I have a friend who will say, "no hablo Inglés" to some people and "I don't speak Spanish" to others. Sometimes both.

My ex-wife was not a native speaker, but she had a minor in Spanish for her undergrad degree. She's Caribbean. We lived in Florida, and she would just refuse to speak Spanish to people who couldn't speak English. Things like that are probably why we are divorced.
In Tampa, it wasn't so bad, but in Miami it was. We tried to eat at a restaurant, and she refused to order for us, so they had to bring the dishwasher guy from the back to attempt to communicate with me in broken English. And all we wanted was to order food. |

Meseca cornbread.
I wanted cornbread but aloso wanted the experiment.
I thought to myself why not use the corn flour I have. Not to be confused with what some people call carn starch in other parts of the world. But Corn flour or Maize like you make tortillas from. Here is what I did right off the top of my head. 1 cup Corn flour. 1 cup white all purpose flour. 1/4 tsp salt. 2 and 1/2 tbsp of baking powder. 1 jumbo brown egg. The juice from a can of yellow hominy and enough milk to fill up to the top measuring cup. The hominy. Some hot smoked hog jowl oil, about 1/8 cup. I mixed all of the dry ingredients. I then mixed up the wet not including the oil. I then put the oil and the wet with the dry and mixed it up along with the hominy. I needed a little more milk so iput more in, about 1/4 to 1/3 cup. Then poured it into a hot skillet. It is in the oven at 350 and it looks like a monster. I tasted the stuff and it is unbelievably good. Picture coming soon. Well I tried the stuff and it came out good I may have used too much liquid but it was still good.
Nothing like cornbread. Better. After research I found recipes about like mine but I had to look it up with the term cornbread from masa harina, not corn flour. Then the hits started coming in. I found a site by a girl that is Mexican American. That looks good.
I had some Taco John's ghost pepper boneless chicken tonight. It wasn't bad at all. There's not a lot of mass-marketed food that makes me sweat. The hottest wings that the wing street Pizza Huts have are not bad, either. Usually I have to go to a Thai or Mexican restaurant to have really hot food. I like a green habanero hot sauce that a local Mexican place has on every table. It brings every dish up to a spice level I like. |

Quick Chilli.
11/2 to 2 pounds of ground chuck, (I had a 1/2 pound patty last night for dinner). 11/2 hand fulls of chili powder. 1 tbsp of garlic powder. 1 tbsp onion powder. 1 tsp cumin. 1/4 tsp salt. 1/2 hand full paprika. 1/4 tsp red pepper and any other hot pepper to taste. 1 can of hominy. 1/2 cup of V/8 juice low sodium. If you use regular V/8 omit the above salt. About 1/2 to 3/4 cup of water more or less. Drain hominy and run through a food processor until it is a thick paste. Brown meat in a skillet and chop up with a spatula. Put all ingredients in a kettle/sauce pan and simmer until you cant stand it anymore. Cooking time 45 minutes to one hour. Eating it now. The Tamale
The Tamale is one of my favorite foods and goes back many years to the Aztec and Maya.
I may have brought up tamales before but I am going to do it again. They have been part of my life since the very day I was born and have been since.
