Something I really like is a perfect beefsteak, the top and bottom cut off and the middle "steak" on a plate with Real Salt, eaten with a knife and fork, and a mound of cottage cheese on the side. Sometimes finely chopped green onions in the cottage cheese.
Talk about a feast.

That sounds deeelish, Deborah! I like cottage cheese with tomatoes too. Sometimes, I cut the tomatoes up and add them to the cottage cheese.

I never thought of cottage cheese with tomatoes interesting, I am scared to try it.. But, you have reminded me how much as a young girl I loved cottage cheese with pineapple chunks.. I will have to go get some pineapple and cottage cheese.

Don't be afraid. Tomato and cottage cheese go as well together as a BLT. I had it for breakfast this morning.

I was preoccupied with having a GWR BLT this year...and I had never had a GWR tomato before. HMMM, weird!, BUT it was DELICIOUS! I use a summertime green dwarf and the next was from my Grandpa Gary's Green...the next will be an Aunt Ruby's german green or whatever is ripe next.... But no lettuce...Lambs Quarter makes a fine substitute at this time of year. Or BCT's (bacon, cukes and tomatoes...that works, too).

Carolyn,
I agree! I don't know exactly why, but I seldom see people using sliced cukes on a tomato sandwich. It is one of my favorites, preferred over lettuce.

I buy organic dandelion greens for my rabbits. One time I was out of lettuce and tried some dandelion instead. The greens are long and tender and are SUPERB in place of lettuce on any sandwich.

Great thread here...love all of the suggestions and I plan to try a bunch of them out. I'm especially intrigued by the cottage cheese suggestions.

My favorite is the BLOAT...Bacon, Lettuce, Onion, Avacado, Tomato. The BLOT is also good if you're not into avacados.
