Default Preserving Eggplant

What is the best way to preserve eggplant?

Althea, I guess nobody knows the answer. I've not preserved eggplant either, but I've read that the best way is to prepare your preferred eggplant dishes and then freeze them. Or you can batter and fry it then freeze.

You could also ask this in the "other place" in the harvest forum and get all kinds of answers I'll bet.

I just searched the archives of that other site and found two threads on point. The best way to preserve eggplant is by freezing. Slice the eggplant, soak it in water & 1/2 cup lemon juice for 15 minutes (to prevent it from turning a funky brown color), freeze the slices on a tray, then transfer the frozen slices to a freezer bag.

Eggplant is too thick to be canned safely, so canning isn't recommended.
