Black Hungarian
I have several plants growing, with a large amount of fruit set. The majority of the fruit are half black and half green. The black side is a deep color, and I picked these thinking they were ripe. It was after I picked them that I realized the other side was green. It is my guess that the side of the tomato that was facing the sun was the black side.
Should I wait for the remaining fruit to be fully black before I pick? And the half and half fruit - can I save seed? Will the heat factor change if I wait until they are fully black and/or eventually turn red? I've never grown peppers before and am growing for other people so I want to give them the peppers when they are fully ripe. Thanks for any info. Donna

Black Hungarian peppers should be fully black/deep red. When I grew them even the calix was black. The heat (they're pretty mild) and flavor won't fully develop if they are still partially green. They're open pollinated so you can save seeds.

So, I should pick them when they are completely black or completely red?
And at what point can I save for seed? I have a bunch that I just picked that are half black and half green - can I save seed from them? Too bad their flavor isn't as developed. I know better now, thanks!!!!!!! I have no idea when it comes to peppers. Donna

They ripen to black, some will turn a very deep, almost black, red. Seeds are best at this fully ripe stage.
