Need help w/Beets
I have been going nuts looking for the recipe for canned spiced, shredded beets. They were the most amazing beets ever and I want to can some up but I can't find a recipe for them. Anyone have a recipe to share please?

Spike, here is a tested recipe for pickled beets. You can add whatever dried spices you want to it. Keep the vinegar/water ratio. If you want a less acid flavor, just add a bit more sugar.

There's a Polish Shredded Beet recipe that I want to try some day. You didn't say what spices were in the one you are looking for, so no idea if this is even close, but it sounds good.

I make 9 pints at a time in the canner, so I can't guesstimate how many beets I use - I just fill my soup pot with about 1/2 bucket of beets. I've used this recipe since the 90's, so I know it's good. (And easy to remember). I grow Cylindra beets for pickling.
4 cups cider vinegar 4 cups water 4 cups sugar 1 tsp. Ground allspice 1 tsp. Ground cloves 1 tablespoon Cinnamon Boil the beets, slip the skins, slice the beets. Fill the pint jars with beets. Boil the ingredients. Recess for 10 minutes, depending on altitude. |
