Simple Fried Eggplant

2 cup peeled pieces of eggplant.
2 tbls olive oil
2 cloves a garlic
1 tsp salt
1 tsp pepper
1 tsp oregano.

Warm the oil in pan and the slowly brown the garlic (use low heat)
add every thing expect the oregano and brown eggplant for 25min.(med to med high heat)
turn heat down heat to low and oregano and cook 15 min.
eat warm
