link Italian sausage vs link Sweet Italian sausae
I made a new recipe that called for sweet Italian sausage and I bought regular Italian sausage.
it was good, but I want to know what is in sweet Italian sausage that is different from regular Italian sausage. I added anise and Thai basil and would have added some sweet bell peppers chopped up finely if I'd had them on hand. |

I believe there is no difference. There are two types -- hot and sweet/regular.

If you want a really nice flavor, use wild fennel seed if you can find it. Completely different from the fennel seed you can buy in the store.
For hot sausages, add some cayenne pepper. Or, try a little hot paprika. I grow an Italian pepper (D'Appendere) which has some heat. I pick them fully red, dry and grind them in to powder specifically for adding to sausage meat. There are commercial varieties called Calabrian Paprika or you can use Aleppo Pepper, but they are hard to find and usually aren't cheap. |
