Indoor growing?

I'm planning on growing some stuff inside this winter with some water beads that I baught from eBay

Is there anything that does really well with the water beads?

Should seeds be started with dirt first or can they be started in the water beads?

I'm thinking herbs possibly a tomato and pepper or 2 and some goji berry possibly more if I can think of anything else
