Default Harvesting Sunflower Seeds for eating

Have grown Sunflowers for eating for the first time this season winding up. The one thing that I am not sure about is timing the harvest of the heads to maximise yield. The flower bases are just starting to fall and can be brushed off easily by hand. Any directions would be appreciated

That sounds about right. Lucky no birds have eaten them yet. Normally one can't do that here because of them. What people do then is cut the whole flower and let it dry somewhere safe, which also yields nice seeds if it wasn't too early cut.
