Leek Kale and Tomato Soup
I had the last of the remaining leeks and kale to take out of the garden and wanted to make a soup with them. I made the soup below. Also from our garden was garlic, summer savory, thyme, frozen tomatoes, frozen Aji Amarillo peppers. Also potatoes, salt, pepper, chorizo, bacon, chicken broth, tomato sauce and black eyed peas. It's great and I look forward to freezing most and having some through the winter.

Looks great, when I first saw the Aji Amarillo I thought it said Armadillo.

That looks hearty! I dug my leeks, cleaned 'em off and have them sitting in an inch of water in my cold garage. Have to use them up pretty fast or they start drying out. Deer got the last of the kale before I did. Carrots still in the ground, but I have them covered with plastic and boards until I can dig them before the ground freezes. I love soups and stews in the fall, easy to make, just throw in what you have around.

Thanks everyone! I make a lot of soups in the cold season, easy tasty and warming. Armadillo now that would be interesting. Having only seen an armadillo once in my life how would one 'deshell' one? But seriously the Aji Amarillo made a really nice addition and I think I need to put chorizo in more soups.
