Green Tomato and Onion Casserole
This is a healthier alternative to Fried Green Tomatoes. Of course, if you want to use full-fat cheese, go right ahead!
I used more toms than the recipe calls for, simply because I had them. It also works well in the microwave - nuke on high for 10-15 min. 6 medium tomato(es), Green, sliced 1 large onion(s), sliced 1 cup(s) bread crumbs, whole wheat 1 tsp sugar 1/2 tsp black pepper 1 cup(s) low-fat shredded cheddar cheese 5 spray(s) cooking spray Instructions Preheat oven to 400F. Spray a 1-quart casserole, deep-dish pie pan with cooking spray. Combine sugar and pepper in a small bowl; mix well. Arrange one-third of the tomato slices in the bottom of pan. Arrange half of the sliced onion on top of the tomatoe slices. Sprinkle one-third of the sugar mixture, one-third of the bread crumbs, and 1/3 cup Cheddar over onions. Repeat with a second layer. For third layer, add remaining tomatoes, sugar mixture and bread crumbs. Spray lightly with cooking spray. Cover with foil. Bake 1 hour. Uncover and sprinkle remaining 1/3 cup Cheddar on top. Bake 5 minutes longer, or until cheese melts. Remove from oven and let stand 15 minutes before serving to allow the flavors to blend.
