Default Different Tomato Textures

Sometimes I like a creamy-textured tomato and sometimes I like one that's a little more crisp-fleshed. I don't mean hard or underripe or tough by any means, but something has a little "bite" to it.

Can anyone recommend me something in the "somewhat crisp" category? Eva Purple Ball has been like that for me this year. Lightly chilled, it's as refreshing as eating thin slices of perfectly ripe melon. I'll be growing it again, but I'm also looking for a larger fruited tomato.

Big Beef stays pretty firm even when ripe. For me it has very good production and flavor. Early Girl stays firm as well. I'm sure there are others but these two come to mind right now.

To me Green Giant has a nice "crisp" texture. Slightly chilled it is better than melon any day, especially when topped with a slice of buttery prosciutto. Oh, man, now I need to go outside and give the GG plant a "Hurry up and GROW DA^^IT" pep talk.

Excuse me while I drain the drool out of the keyboard......

A crisp yummy tomato like flavor with good heat/disease tolerance would be:
Thessaloniki which is a productive red RL Greek variety.
