I must say I was skeptical of having skins and seeds in tomato sauce but as an experiment and to clear some countertop space I went ahead and ran a few dozen tomatoes through my food processor yesterday and cooked them down while my daughter made stuffed shells. I was pleasantly surprised at both how easy it was and also how the skins and seeds did not detract one iota from the finished sauce. Actually, between the processing and cooking, the skins were pretty much undetectable and (for whatever reason) the seeds were scarce.

The real bonus was a lot less mess than my endeavors of previous years!!!

Thanks for the idea Ray. I’ve got another 65 pounds or so still left on the counter than I’ll be cooking down today.
