Tomato Juice - I have questions???
I want to make juice this year, I thought I had a juicer, but it turns out my wife returned it after last year's EB and NO fruit.
1. What's the best juicer, IYO? Reasonably priced (under $150) 2. Are the seeds still viable after juicing? Can I still save them? 3. How long, approximately, is the juice good for without canning? Or should I just can most of it? Or should I freeze it? Or what is your suggestion? 4. Do I need a recipe, or is it just add salt to taste? Thanks for your input, Tom PS - I have read all the prior posts found with a search

For tomatoes, add one teaspoon of salt per quart. Some folks use only lemon juice but I prefer the salt.
The salt must be canning salt (without Iodine). Kosher salt has no iodine. Most brands of supermarket sea salt also will state no iodine. Make sure the salt container indicates no iodine. One way to get thicker tomato juice without boiling it down is to remove the seeds and seed gel before putting through a processor or food mill. I use a knife to "pick" this out of the sliced tomatoes. This is great because you get to save the seeds. Ted

We use one that is similar to Food Mill . It was around $50 and works great. We can around 75 quarts of juice a year and have given our mill a good workout. Last year we did some quarts with just lemon juice and some with lemon juice and salt and prefer it without the salt.
