Default Salsa Recipe

Too bad there is not a Tomato recipe forum.

I have an early salsa recipe and a late one because we have a fast and widely varying season. All from my garden and ALL organic.

1) early salsa
at least two types of red tomatos chopped
at least one yellow or orange flesh tomato chopped
scallions from the onions that are not yet ready chopped finer than the 'matos.
basil very finely chopped (I always grow basil in the gaps between tomato plants.
garlic finely minced
cilantro chopped
a mild sweet vinegar like rice vinegar
salt and pepper.

cavet: no need to open a salt mine, grow a black pepper tree, or distill vinegar. I'm going to trust that I remain kosher (organic) with store bought.

2) late salsa
skip the scallion and mince sweet vidalia white onion and red onion along with finely diced red and green bell peppers and Hatch NM chili peppers.

I am going to experiment this year with thinly sliced baby carrots.
