help from the tennessee growers
just encountered my first bowl of Tennessee style chili. its extremely tomatoey and diff from the normal chili recipes from my area. anyone have a good authentic Tennessee style chili recipe they're willing to share?

TENNESSEE PRIDE CHILI
Printed from COOKS.COM 1 lb. Tennessee Pride Country sausage 1 lb. ground beef 1 med. onion, chopped 1 clove garlic, minced 1 med. green pepper, chopped 1 (28 oz.) can whole tomatoes, undrained 2 (16 oz.) cans red kidney beans 1 tbsp. chili powder 2 tsp. ground cumin 1/2 tsp. salt 1 c. water Saute sausage and ground beef, onion, green pepper and garlic until browned; drain excess grease. Stir in remaining ingredients. Break tomatoes with back of wooden spoon. Cover and simmer 1 to 1 1/2 hours. |

TENNESSEE CHILI
Recipe courtesy Tami Beitz, the NFL’s official Homegating expert (A distinct smoky flavor – made with bacon, ground beef and beans) Ingredients: 6 slices of bacon, diced 2 cups sweet onion, diced 3 teaspoons garlic 2 pounds ground beef 2 tablespoons cumin 2-3 tablespoons of chili powder 2-3 tablespoons of ground chipotle chili powder 1 tablespoon of salt ½ teaspoon of freshly ground pepper 1 can (14.5 ounces) diced tomatoes with liquid 1 can (14.5 ounces) beef broth 1 can (16 ounces) red kidney beans (16 ounce) 1 can (6 ounces) tomato paste 1 cup diced green pepper (approx one medium green pepper) Directions: Heat a large stock pot over medium/high heat. Add bacon and stir occasionally until bacon is crisp, about 4 minutes. Add diced onion and garlic, cook for 2 minutes. Add ground beef, cumin, chili powders, salt and pepper. Stir often to break up meat and cook until meat is no longer red, about 10 minutes. Add tomatoes, broth, beans, tomato paste and diced green pepper. Stir and bring to a boil. Cover, reduce heat and let simmer for 1.5 hours. Adjust seasonings as necessary. Serve with corn chips and cheddar cheese for garnish. Note: For spicier chili, add extra of each chili powder. Prep time: 30 minutes. Cooking time: 1.5 Hours. Makes: Approx 10 cups, 8-10 servings. |

Thanks.
i did a good amount of searching the web before my post. this recipe is a basic starting point, im looking for something a little more. the whole tomatoes seem to be one difference but i know some more spices were in the one i had. maybe a cross between an italian chili and tennesee chili as the place i got the chili from is a little italian bakery. they have a sign up calling it "nicks tennessee chili"

To be truthful, I have never heard of Tennessee being known for its chili. Bar-B-que yes, but chili no !!!!!! That being said ,the only two places in Nashville that was known for their chili were both Italian. Tony The Chili King and Varallo's. Tony's has been closed for 40 + years. Varallo's is still going strong .
