Kudzu,
This is a real similar thread from the last few days. Run a search for brix content as well. Wish I had more info to offer.

I hadn't thought about it, but lots of people comment on the sweet flavor of tomatoes, but I don't see many comments about highly acidic tomatoes. The only one I can remember that was over the top acidic for me was Jaune Flamme. Most folks comment about how good it tastes, but in my garden it was to acidic and I like acidic tomatoes.

Jaune Flamme is nice and sweet here in Sacramento Ca.

Kudzu - brose through this database, you will likely find some tomatoes described as acidic: http://t.tatianastomatobase.com:88/w...itage_Tomatoes

I much prefer the term aggressive taste since of all the tomato varieties tested for actual pH to date, there's a very narrow pH range.

And yes, I think there was a recent thread here about aggressive/acidic tasting varieties, probably one of the ones linked to above.

But since taste is personal and perceptual and there are many variables that go into the taste of a variety it doen't surprise me one bit that one person will say they thought this or that one had an aggressive taste and someone else will say it was sweet and delicious.
