Sure - have to get the details from the wife. She's the brains behind the canning. I know we peeled and diced(very small) about 8 or 9 quarts of tomatoes,15 Hungarian Hot wax peppers, and 8 onions a little smaller than tennis balls.
I wear rubber gloves when I take the ribs and seeds out of the peppers and I keep my hands away from my face.

Will get the rest of the info later.

Carol's Super Soup
Makes 18 quarts:
1 peck ripe tomatoes - peeled and diced
2 large heads cabbage - chopped about like you would for coleslaw,or a little bigger
12 large onions - chopped and diced small
2 bunches celery chopped and diced small
1 quart chopped carrots - split and sliced thin
18 large ears of corn - cut off the cobb
2 quarts of shelled beans (green string beans left on the stalk to ripen and dry)
3 green peppers chopped and diced small
parsley - if liked
salt to taste
cut vegetables per usual
cook one hour in open kettle
pack in jars and boil one hour in waterbath
when using,we add at least a pound of small beef (1/2" to3/4"square) cubes per quart of soup.
