For saving seeds from the self-pollinated inbreds, tag the unopened blossom clusters before you tent the plant and collect seed from those.

Eventually the tomatoes will fill the cage, and the groweb fabric will need to be removed. If any fruit has set, it could be considered "bagged" and not crossed.
