Default Watering mature plants

Hello. My tomatoes are starting to ripen, It is very hot and dry at my place. My question is this. Do you stop watering your plants when the fruit starts to ripen. Someone told me this is what you do to prevent cracking. I water my plants every 5 days. Each plant gets 5 gallons of water. Also, what causes the tomato to crack after I pick it and carry it in the house and it sits on the table overnight? I have German Johnson potato leaf, Cherokee Purple, Better Boy, Better Bush, and Roma II VF.
