I did same pepper plants in a RGGS 5gal. and 5 gal.top watering with holes in bottom of bucket. The top watering buckets are doing the best. Larger plants and more peppers. My tomatoes love the RGGS! The peppers will all be top watered next year. I agree they like to dry out a little.

Pepper plants DO NOT like wet feet I like to let them droop before watering.

Clarify "wet" as "saturated". They like moist soil well enough, yet need the air that is present in un-saturated soil. I'm with you on letting them wilt.
