Yes, some will ripen and some won't. Any that look like they might have a chance at the end of the season always get picked and brought inside to ripen.

Last year I had mostly green pastes at the end of the season so as they ripened I threw them in ziplocks in the freezer. When all was said and done, I had enough for a small canning batch and we've been using the pint jars of purée for pizzas this past winter.
