Default first flowers

Most of my plants have their first flowers growing.
They hang 0,8 to 1 foot above the ground.
Is that too low?
Will the tomatoes touch the ground when they ripen?

The distance from fruit to ground shouldn't matter- lots of folks don't cage/stake tomato plants and so lots of their fruits are closer to the ground than yours are. If I find tomatoes reaching the ground, I just put a piece of wood under them so they don't touch the ground which makes them less likely to rot or be nibbled.

ok,

When transplanting a couple tomatoes, I accidentally cut of a growing top.
Can I let one of the side shoots grow and use it as the main stem?
Will it be productive?

Yes

I agree- definitely yes but it may take a while to get over the shock.

Figure about two weeks before it gets going again after
topping the main stem.
