Emerald Delight was developed with a more open growing habit, to make it easier to spot those elusive, tasty squash. They are also ready for harvest about a week before other types, and plants are resistant to powdery mildew, zucchini yellows and mosaic virus. Home-grown squash is first-rate, and one of the most versatile of vegetables. Enjoy it raw with dip, in salads or on sandwiches. Add to soups, omelets and breads, or make into relish.
