Default A little under ripe

I find I like most of my tomatoes a bit under ripe best. From black krim to sungolds to the dwarf ones I'm growing and most of the rest. The only tomato I'm growing this year that I prefer fully ripe are purple bumblebee and the experiment tomato. Anyone else find themself in the same boat?
