Those look great! You could dip them in a corn batter and fry them for chile rellenos con tocino.

Here's a picture of his little cousin. They are bit sized. Cream cheese mixed with green onion placed on cut jalapeno and wrapped in bacon...placed in smoker.

I do ABT's all the time. Mostly stuffed (with just the tops cut off and cored of veins & seeds) with breakfast sausage and cream cheese, but I also stuff them with leftover shredded chicken in Buffalo wing sauce and Blu Cheese or a whole shrimp and brie.

The whole secret for stuffing them (and Pablano's too) is using a "Jerky Shooter: - $15 on Amazon. It is like a food grade calk-gun with a big tip. Goes right in the dishwasher. I'll do 60-100 ABT's at a time for parties, takes no time at all to stuff them with the shooter.
