Default MY LONESOME DOVE CHILI on impulse

Riding through the grocery I saw Pork shoulder marked way down and a very small boneless one for less than five dollars. Grabbing that my way to the Latin section searching for chilies. Nothing dried looked decent, but there was a tall plastic bottle of a Latin ground version. When I got home I was able to use about a dozen of my less than perfect tomatoes that I mixed with a pint sized beer and a bit of water, Then grabbed some parsley and oregano from the herb garden. The half bottle of powdered chilies were too hot for the wife, so I added about a cup and a half of dark, sweet, Spanish paprika to tone it down. Then salt and pepper to taste. Cooked it all down then strained.

Chapped up the pork, added chopped onions, lots of cumin, garlic and put all into pressure cooker on low for a few hours. With so much meat, I can now have the chili and plenty of meat for other uses like tamales, and empanadas. The liquid will make a great sauce. All dedicated to "PIG" from Lonesome dove. With so many extra tomatoes will come bruschetta, salsas, etc..

That sounds good, mensplace. Lonesome Dove is one of the few western series I really like. The only other one that comes to mind right off the bat is Hell on Wheels. Movie wise I love The Man From Snowy River.

You asked about my chili in another thread.
I will answer here.
You are going to have to experiment on your own but just dont use any vegetable products in any way that are not dried or juiced.
The correct chili powders are going to give you fits if you cant find them.
The number one player is that red ancho.
Next is a hot variety like arbol and then cumin garlic powder onion powder paprika Mexican oregano masa flour salt.
Put number one in the line up first let it cook a bit.
Then start adding the others until you just taste them and move on to the next.
Salt will be last if used at all.
The hot chili use as you want if at all.
At the very end mix your rmasa flour with water and pour it in the pot and let it simmer and thicken to your liking not mine or anyone else but yours.
The whole thing is about you and what you like.

I didn't catch on to Hell on Wheels at first, for some reason. But after I got into it I was hooked. Very, very good. Unfortunately, it didn't seem to make much of a splash with the larger audience.
