Default Refrigerate Or Not

Does eggplant keep better in or out of the refrigerator? I pulled my first one today, a Ping Tung, but one eggplant fruit by itself doesn't go very far. I wanted to keep it until I have another one to go with it. Then it might be enough to cook up something. So should I refrigerate the first one or just leave it sitting on the countertop?

Hi, Holly. I always keep mine in the fridge. If not, the skin usually starts to wither up and the texture of the flesh is not what it should be. Refrigerate and enjoy!

Thanks for the advice. I think I will have a Thai Long Green or two to go with it soon enough.

I also have a Rosita starting on one plant, (from seed you gave me). I decided to go with just those 3 varieties this year. Next year, I will probably try some others. Right now my eggplants are my best hope. All my tomato plants keep dying from some unidentifed wilt disease. Bunnies and chipmunks are raiding my melons, (eating them while they are still unripe). The eggplants seem to be the only thing not hindered by disease, insects or animals.

Yep, get some fruit keeper bags or just use a plastic bag and they will keep really well for up to, say, 10 days at least.
